Martin Blunos held two Michelin stars for over two decades. He earned them at Lettonie in Bath — one of the most celebrated restaurants Britain has ever produced. He is also, as it turns out, exactly the kind of person who looks completely at home in a Bangkok street market at midnight.
That is the thing about genuine talent. It travels. It adapts. It finds the same joy in a ten baht skewer as in a twelve-course tasting menu, because the joy was never really about the price.
We photographed Martin in Yaowarat — Bangkok's Chinatown — during a visit to the city. The brief was simple. Show the man, not the accolades. This is that photograph.
Martin Blunos features in One Create Magazine Issue 2. The full interview covers his career, his move away from fine dining, and what Bangkok did to his understanding of food.
